
How to make sweet Kaju Katli?
I was in Goa for a couple of days. The main agenda was to finish off with the yearly Gods pooja rituals which we missed for the past 4 yrs. This time around I was not able to move much and had to hire a taxi. The taxi driver got friendly and took us to his home which was very close to one of the temples we intended to visit.
In his house, I could get the aroma of cashew nuts being roasted in fire. Casually I went to see and found his son roasting cashew nuts. It seems they collect the wild and some home nuts and dry them. They are roasted when required. The driver was obliged to share with us some quantity. The taste of fire roasted cashew nuts is miles ahead of the costliest of the cashew you get in the market.

Came home to Mumbai and deskinned the entire lot. Decided to make Kaju Katli. When my intent was clear, tha son before boarding the metro for college sent in a Whatsapp msg to his mom : Strictly ensure my share of nuts are not used by dad,
Kaju Katli recipe:
I have used 3 cups of de skinned cashew which I ground to fine powder. They release oil so you have to PULSE it in the mixer quite a few times. Then I sieved this powder through a fine mesh. To the powder I added one cup of milk powder. Mix well. Heat two cups of water and add one and half cups of sugar. When sugar dissolves, keep the gas slow. Add the cashew powder and mix well. Also add cardamom powder . The mixture thickens. Make a dough and then put this dough in butter paper. Using a roller pin roll a thick chapati. Then cut into diamonds. Leave to cool.Eat.
