The older preparation of Malpua just includes deep frying in ghee and dipped in sugar syrup.

Generally, Malpuas is known well for the crispiness outside and being soft inside and that makes it melt down the tongue in a minute. You can enjoy however you can with the malpua recipe. Pairing up with rabri gives you the ultimate taste ever. This is because Rabri accentuates the flavor, texture, and ingredients of this malpua. Before you start to prepare Malpua at home, make sure you have the following ingredients like all-purpose flour, khoya, fennel seeds, semolina, milk, saffron, green cardamom powder, sugar, and finally baking soda. As the festivals are rushing down the time, this is one of the easiest and delicious recipes you can prepare this mouth-watering recipe at your home.

Here I am listing the ingredients for serving 2 persons:
Khoya – 2 tablespoons
Green cardamom powder – 1 teaspoon
Chopped pistachios – 2 tablespoon
All-purpose flour – 1 cup
Saffron – As required
Semolina – 1 tablespoon
Sugar syrup with 1 string consistency – One and a half cup
Readymade rabri – 10gms
Refined oil – One and a half cup
Water – As required
Steps to make Malpua:
Step 1: Malpua batter preparation steps:
Let’s see the malpua batter preparation in simple steps. Though we know malpua is soaked in sugar syrup for some time, there are few initial methods involved for this delicious recipe. In a bowl, add khoya, all-purpose flour, and semolina (sooji/rava) and mix it well. After mixing, add the powdered green cardamom powder and mix it well again.
Then add water in a little and get the batter mixed up. Pour the water into the mix and get it to a pourable consistency. Ensure that batter is not so thick; it needs to be in pourable flow. Now, you can keep the batter aside for few minutes and start to prepare saffron water. So, take a small bowl again and soak saffron in water for some time to form saffron water.
Step 2: Malpua Frying and garnishing to serve now
Take a pan and add oil and allow it to heat under a low flame. After the oil gets heated, now take a ladleful of batter, pour it in a pan, and spread it evenly. Make sure that the flame is low and cook malpua. Be patient until the malpua turns golden color on both sides.

Now, take malpua out and then drain excess oil from it. After draining oil from it, soak the cooked malpua in sugar syrup and allow it to rest for 10-15 minutes. Follow the same procedure for the remaining malpua batter. Finally, drain the malpua from the sugar syrup and garnish it with chopped pistachios, saffron water, and rabri. That’s it, delicious malpua is ready and now you can start serving it.
Some tips for delicious malpua:
· Allow the malpua batter to rest for six to eight hours before you start to fry.
· Older preparation of malpua involves mixing of maida to it. Fore a healthier malpua recipe, you can use wheat/atta flour by mixing them in the ratio of 1:1.
· For lip-smacking malpuas, make the sugar syrup to 1 string consistency. Do not thicken it.
· The addition of green cardamom powder and saffron in your malpua recipe adds more delightful flavors.
