Step by step guide for prepare Mutton Curry With Green Masala




Ingredients: 500 gms Mutton Cleaned and washed well. Add a bit of turmeric,salt and  1 tsp vinegar  to the mutton and rub it nicely and keep aside for 20 mins, wash off well with water and pat dry.

For the green masala

100 gms coriander leaves with stems

4 green chillies

4 garlic cloves

1 tsp cumin powder

1/2 tsp Tempero Di cuddi powder

Or can replace this spice powder with garam masala

1/4 tsp turmeric powder

1onions sliced

Grind all the above to a paste with just enough water.

Ingredients 2

2 onions finely chopped

2 tomatoes finely chopped

Must Read: Three small pieces of Surmai. Light masala and tava fry. Very cool.

1 tsp chilli powder

1/2 tsp pepper powder

2 potatoes

2 to 3 tbsp ghee( clarified butter)

1 tsp vinegar


In a pressure cooker add the ghee ,once hot add the finely chopped onions and stir fry till lightly browned. Then add the tomatoes and keep stir frying,add a bit of salt at this stage helps the tomatoes to soften and cook .

flavouring Chicken, mutton, beef or Pork

Once the tomatoes are soft and done add the ground green masala and stir fry this masala on medium flame for just a minute. Add some water around 1/2 cup and allow this masala to cook. After a minute add the mutton and mix well. Add just enough water, chilli powder and pepper powder , pressure cook on high then low for 10 mins. Check if more salt is required,add accordingly. Add lastly the chopped potatoes and pressure cook on high for 1 whistle. Once done add a tsp of vinegar and give it a boil.

40 gms cardamom

40 gms peppercorns

20 gms Star anise

10 gms Javitri

10 gms bay leaf

5 gms all spice

5 gms Triphal

10 gms saunf

10 gms methi seeds

10 gms Shah Jeera

Dry ingredients in the sun, lightly roast, Dry grind the spiced , sift well, and bottle used for flavouring Chicken, mutton, beef or Pork
