Step by step method of cooking Poha Upma with Potato
Batata Shengdana Kande Pohe / Poha Upma with Potato. Poha has high nutrient value and is recommended as one of the healthiest Indian breakfasts by nutritionists. Poha is an easy, delicious and healthy breakfast. It is made using Flattened Rice, Curry Leaves, Spices, Onions, Potatoes, Peanuts and Green Chillies. Served garnished with Fresh Coriander Leaves, Coconut & Lemon Juice

1 cup Poha / Flattened Rice
3 tbsp Clarified Butter / Oil
1/2 tsp Mustard Seeds
1/2 tsp Cumin Seeds
2 large Onion finely chopped
3 Green Chillies finely chopped
1 Spring of Curry Leaves
2 Potato remove skin and cut to small pieces
Turmeric Powder
Salt
1 tbsp Sugar
2 tbsp Fresh Coriander Leaves finely chopped
Preparation
1) Sieve Poha then take it in a bowl, wash it twice. Drain water from the poha into a sieve and keep it aside. Add Salt & Sugar to the drained Poha.
2) In a cooking pan add Clarified Butter and Potatoes cut into pieces, fry till it is cooked. Transfer fried potatoes in a plate and
3) Now in the same pan add Clarified Butter once hot add Mustard Seeds, Cumin Seeds & Curry Leaves.
4) Add Onion and cook till translucent
5) Then lower the flame, add turmeric powder and drain Poha and mix it well. Add fried Potatoes, cover and cook for 2 minutes. Add Salt if required.
6) Add Fresh Coriander Leaves finely chopped. Serve it hot garnished with Fresh grated Coconut, Fresh Coriander Leaves & Lime Wedges. You can also use 1 tbspn fried Peanuts / Cashew for garnishing
